Green Caprese Salad

2 balls of Mozzarella di Bufala
1 Persian Cucumber
2 Sprigs Parsley
1 Sprigs Mint
2 Sprigs Basil
2 Chives
Extra Virgin Olive Oil
Mediterranean Herb Balsamic
Herb and Salt

  1. Slice the Mozzarella into ¼ inch slices and place in two rows on an oblong serving dish. In each the row, the mozzarella slices should slightly overlap, like a spread-out deck of cards. Sprinkle each mozzarella slice with a little herb and salt. Thinly slice the Persian cucumber on the bias.
  2. Pick the leaves of the parsley, basil, and mint. Between each of the mozzarella slices gently slip in one piece of cucumber and one leaf each of the basil, parsley, and mint.
  3. Generously drizzle with the Mediterranean Herb Balsamic and olive oil. Chiffonade the chives and sprinkle evenly across the caprese salad. Enjoy!
