Burrata Spinach Salad with Citrus Balsami

Add the citrus vinegar in a small saucepan over medium heat. Bring to a simmer and reduce by half. Remove from the heat and allow to cool. Pile the spinach leaves onto two plates and top with burrata.
Drizzle the spinach with some of the balsamic reduction and the olive oil. Sprinkle with salt and pepper to taste and enjoy!
