Chinese style BBQ pork

Dissolve sea salt and sugar in water. Mix in the 5-spice.
Put pork and brine into a sealed container or zip-lock bag. Refridgerate and let sit for at least 2 days.
Preheat oven to 275 degrees F.
Pat the pork dry and place in a greased baking dish. Baste lightly with glaze. Baste again occasionally while roasting.
Cook to 152 degrees F internal (about 3hr). Let stand at least 20 minutes, or chill overnight before slicing.
Serve with Chinese-style mustard and sesame seeds.
