This superfine, preferred rice has a high amylose starch content which improves consistency, resistance to over-cooking, and capacity for absorbing condiments and flavoring agents.
Increasing known as the "caviar of rice," Carnaroli is able to absorb a large quantity of liquid while developing a creamy consistency and retaining an al dente mouthfeel. One of three primary risotto rices (Arborio, Baldo and Carnaroli), Carnaroli has a high amylose starch content (24 percent) which improves consistency, resists over-cooking. The ideal rice for long-simmer, non-sticky risottos. The Vercellone family has been cultivating grains for over 100 years in the heart of the Po Delta near Vercelli, Italy. Their Tenuta Castello products are certified organic. Their grains are processed in traditional mills that leave much of each grain's kernel intact without polishing or shining.
