Then the chestnuts are gently hulled are re-roasted and finally, they are artisan ground in an 800 year old mill. The natural smoky sweetness of this flour is prized in making crepes and crespelle, quick breads, and classic Tuscan Castagnaccio or chestnut flour cake.
