In the terraced hills of "Ceppeto" near Gaiole in Chianti, Roberto Droandi tends to his Moraiolo, Frantoio, and Leccino olive orchards, the source for his certified organic extra virgin olive oil. The ancient rock walls supporting his trees provide for excellent drainage, and the long maturation period possible in the Chianti Classico zone affords optimal olive ripening. In addition, the careful pruning of his trees, early autumn hand-harvesting of his olives, and state-of-the-art processing of the harvest results in an extra virgin with fruity freshness and spicy-herbal notes that lead to a smooth yet persistent finish.
MANNUCCI-DROANDI has an extremely low free oleic acid content and a high level of polyphenols, earning it a place among the best extra virgin oils in Italy as well as exclusive membership among organic and D.O.P. extra virgin oils from the Chianti Classico zone. Manucci—Droandi is perfect for bruschette and appetizers as well as for cooking and finishing classic dishes such as ribollita (savory bean-and-bread crust soup), grilled meats, bisteccha fiorentina (Florentine steak), and pasta of all cuts. Moreover, it sets off any pasta dish and is a classic "dip" for pinzimonio (a Tuscan medley of fresh, raw vegetables used for dipping).
