Spiritosi Ricotta Puffs

Preheat oven to 375ºF
Combine all ingredients in a mixing bowl. Divide mixture into 12 muffin cups. Bake for about 30-40 minutes, or until lightly browned. Let cool. Serve on bed of greens tossed with a drizzle of Mint infused Olive Oil and Organic Raspberry Balsamic Vinegar. Enjoy with a spritzer made from the Spiritosi syrup mixed with fresh lime juice and a little sparkling water.
